To create this beautiful Junmai Daiginjo sake, Brooklyn Kura uses 100% Yamada Nishiki, a single modern yeast, and doesn't let the fermentation go above 11 degrees celsius. The result is delicate and luxurious, an elegan drinking sake for all occasions.
The sake gets its name from the water source used: the beautiful streams and resivoirs of the Catskills Mountains transported to Brooklyn via the Catskills Aqueduct.
