The Kikusui Brewery in Niigata prefecture gives us a brilliant Honjozo (meaning alcohol is added during the brewing process). It is made with Gohyakumangoku rice and has a smooth and slightly sharp texture with earthy notes of grain and yogurt. This pairs great with a large variety of foods and can be served at a range of temperatures. As you serve it warmer, you will find the sake gets creamier. Recommend pairing with Mushroom-Swiss Burger, Roasted Chicken, or Herb-crusted Pork Tenderloin.
