This, the top imported Nama (unpasteurized) sake to the U.S., is produced by Honke Matsuura in the Tokushima prefecture. It is made with Yamada Nishiki and table rice and is Genshu (barrel strength) coming in at 18.5% alcohol. This is a lively sake with notes of pudding, cashew, melon, pear, and fennel and is very food friendly. Pair with Fresh Fruit, BBQ Brisket, Pad Thai, or German Schnitzel. Always keep it cold and serve it cold.
