The 2021 Pouilly-Fuissé Climat En Carementrant, which undergoes one month of aging in barrel and six months in tanks, fulfills the promise I found last year. There are sea spray, green apples and iodine hints on the nose, all very welldefined. The palate is brisk and breezy with a noticeable spine of acidity, gaining depth towards the finish. It meliorates in the glass, so don't be afraid to decant this.
