Do you know what the hardest beer to brew is? The beer you don’t typically drink. And by typically, I mean never drink.

It happened with Necessary Evil, our Pils, and then again with Fallout, our new German Hefeweizen. Neither style was something we gravitated toward, but we recognized our portfolio was lacking without them.

Before we started Fallout, we did a blind tasting of 9 different Hefeweizens with the entire team. As a group, we pretty consistently landed on what we liked and very much disliked. Clove, oh yes. Banana, not for us.

And then we blind tasted our favorites again with each iteration. Fallout was dumped until it could beat the competition.

It turns out we just thought we didn’t like the style. We might lose our beer nerd status by admitting this, but you will find us pouring a Fallout for ourselves more often than a hazy IPA.
