RICH & COMPLEX If you like Champagne, you will love IWA 5 from Richard Geoffroy, the fifth Chef de Cave for Dom Perignon Champagne. Geoffroy took the tradition of assemblage from Champagne to Japan to produce sake that has elegance, balance, weightlessness, intensity, and agability. He melded three strains of rice, Yamada Nishiki, Omachi, and Gohyakumangoku, and five strains of yeast, creating a sake with depth of flavor that includes fresh quince, almond, apple, honey, pear, plum, and white flowers. This sake should be enjoyed from a wine glass, with Caviar, Oysters, Pork Belly, or Chocolate. Recommended Serving Temperature: 50°F, 70°F, 98°F, or 120°F
Description

Intensity is the salient character, giving
an edge to a racy and mouthwatering conclusion.
THE NOSE
Intense, pure, highly defined. The first notes are bright, intriguingly
vegetal, more floral than fruity. The sake calls for a moment of
respiration to grow more complex through darker lower tones.
White pepper -IWA’s aromatic signature- is clearly present.
THE PALATE
One is instantly struck by the impression of superlative balance
and coherence. The weightlessness of the sake unfolds with great
tonicity. All sensations seamlessly converge, drawn to a racy,
tactile, intense, mouthwatering, endless finish.
FOOD PAIRING INSPIRATION
Caviar, sea urchin, oyster, white fish, scallop, greens, asparagus,
cabbage, pork belly, beef, sweetbread, poultry, chocolate, tropical fruits.
