The Ichishima family has been involved in sake making for more than 200 years, dating back to the shogun era. In the 1700’s the Ichishima family was one of the top five largest land holders in Japan. It is said that you could walk 40 miles from Ichishima brewery to Niigata City and never leave land that they owned. Today the brewery is well known for its sake museum that is open to the public and are proud to be one of the first breweries to embrace the employment of female sake makers. Wildflower is a tribute to those female brewers. Mrs. Kazuko Shiiya originally worked in the kitchen at Ichishima Brewery. Cooking meals for the workers from autumn to the following spring she often observed the workers while they were brewing and thought it was intriguing. One year she asked to join the sake production team and was accepted. She began working with 6 other female workers mainly in bottling and other production tasks. After working her way up to assistant sake brewer, she asked permission to take the rigorous examination to become a certified licensed brewer. In 1975 Mrs. Kazuko Shiiya passed the test and became the first women ever to pass the test as a first-grade license brewer. Shiiya san retired in 2003 after working as a first-grade licensed brewer for 39 years. Ichishima Brewery has been awarded gold medals at the National Sake Competition in 2015, 2014, 2011, 2010, 2009, 2008,2007 & 2003.
Tasting Notes: Aromas of lychee, apple, strawberry. Complex, sweet with good acidity.
