Dassai, made by Asahi Shuzo in Yamaguchi prefecture, is a standout in the premium sake market, making sakes of exceptional quality. 45 is a fantastic entry into the Dassai lineup. It is made with Yamada Nishiki rice polished to 45% of its original weight. You will find aromas of violets, strawberries, pears, and Muscat grapes. On the palate you will find a medium-bodied, semi-dry sake with bright acidity and notes of licorice, melon, and apple. Pair this with your favorite Sushi, or a Fresh Fruit and Cheese platter with both soft and hard cheeses.
