Heavensake is the brainchild of world-renowned Chef de Caves, Regis Camus, from Maison Rare Champagne. Regis was the first to bring blending to sake with the intention of creating complex yet perfectly balanced compositions through the art of Assemblage. When Assemblage is applied to sake, the results are more round, balanced sake, similar to the carefully composed wines of France.

The Konishi Brewery has been producing high-quality sake for over 460 years. Their sake is known for its smooth taste and unique aroma. They use traditional brewing methods to ensure the highest quality. The Heavensake Junmai 12 is made from Nihonbare Rice polished down to 50-70%. This sake displays savory notes with distinct minerality, yet is still round on the palate and bright and fresh on the finish. I recommend enjoying chilled in a wine glass with Seared Scallops in Beurre Blanc accompanied by a Wild Mushroom Risotto.
