Rihaku Brewing in Shimane prefecture gives us this wonderful smoky sake made from Kan no Mai rice, a newly developed strain that was bred to withstand cold climates. The smokiness comes from the rice and it is joined by layers of minerality, sweetness, crispness, and banana notes. This is best served at room temperature or slightly warm. Pair with grilled ribeye, seared pork belly, or Oysters Rockerfeller.
Recommended Serving Temperature: 65°-75°F or 95°-105°F
