The Suigei Brewing Company has been producing premium sake in the Kochi prefecture since 1872. Their Kouiku 54 Junmai Ginjo is produced with rice developed by Kochi prefecture called Gin-no Yume, a rice with subtle aroma and citrus notes. The characteristics of the rice are on display in the aromas and flavors of Kouiku 54, subtle and restrained with hints of citrus, great umami, and a touch of sourness with a clean finish.
