The Suigei Brewing Company has been producing premium sake in the Kochi prefecture since 1872. This Tokubetsu Junmai is made from Akitshuo rice and water from the Kagami River, a river lacking iron and manganese. The absence of these two minerals gives Suigei sakes a unique mouthfeel with sharp texture. You will find notes of fennel, roses, tart fruits, and other wildflowers. There is lingering umami on this fresh finish. Pair with Pizza, Charcuterie boards, or a cheesy dish.
