The NV Amontillado Saca de Junio 2021 had a long biological aging, and tasting it next to the Oloroso and Palo Cortado, it showed lots of flor character. It's in the style of a Fino Amontillado, but a really fine Amontillado, a young one at some 15 years of average age. It has finesse and elegance, and when tasted with the Fino, you see more caramel and oxidative notes, but next to the oxidative wines, it shows a strong biological side. It has moderate alcohol at 17%. 1,500 bottles produced.
