Los Nahuales “Still Proof” Jabali & Espadin was distilled in 2016 using 60% Maguey Espadin (agave Angustifolia) and 40% Maguey Jabali (Agave convallis). The jabali was harvested from the hills of San José Lachiguiri, west of Miahuatlan, in dark thin infertile soils. Jabalí is notoriously difficult to distill; the jabali was tamed by the addition of blending it with mature espadin sourced from Pozo Blanco near Santiago Matatlan.

The palate is the funnest roller coaster. First sip you get artichokes, eucalyptus, with a hint of dreamsicle. Think flavor and texture when thinking of the dreamsicle component. Second sip you get currant and anise and you think "Woah, is this the same spirit?" Final sip was petricore and red apple skin. The finish is long and evident. No heat. Simon and I didn't get any physical sensation of alcohol on the palate which is wild, especially at 53% alcohol.
