I had the opportunity to taste the 2012 Cuvee Nicolas right before its release date of April 1st, with Managing Director Alexandre Bader. This special cuvee was initially created in 1964 as a tribute to the house's founder. While other top Champagne houses have already released their 2015 and even 2018 vintages, Billecart Salmon chooses to hold back this particular bottling and release it when they feel it is ready.
A blend of 60 % Pinot Noir and 40% Chardonnay, this wine has incredible tension and minerality balanced by some richness on the palate coming from the whopping 120 months it spends on the lees. It is one of the more expressive Champagnes I have tasted in a long while with pear and brioche as well as citrus and hints of pepepr. Let it warm in your glass just a bit to let the expressiveness come alive in your mouth.
