Biondi’s Etna Bianco is a blend of Carricante, an intriguing white indigenous grape variety with a distinctive stony minerality, with several other more aromatic local varieties. The combination of bright acidity and minerality with notes of flowers, peach, apricot and herbs comes together harmoniously in the glass. A great match for seafood and grilled fish.
The 2018 Etna Bianco Outis (Nessuno) opens to some flinty notes that could denote a reductive approach. This Carricante-based wine is abundant in terms of its aromatic offerings (once you give it a few extra minutes in the glass) with orchard fruit and almond. Serve this wine chilled with some baked flounder and a salad.
A burst of crushed stone and savory herbs lifts up from the 2018 Etna Bianco Outis. This opens further with swirling, taking on notes of baked apple, dried flowers and marzipan. Its textures are silky, almost oily, giving way to a decidedly savory and salty expression of orchard fruit and minerals. Residual acids slowly fizzle out under an air of crushed hazelnut and inner florals. I find the 2018 Outis to be more of a curiosity than an indulgence. It’s a blend of 90% Carricante with Catarrattoand Minnella.
