I met Louis Zabala in 2004 when I walked into one of the first Organic vineyards I had seen. It was some of the first Organic Chardonnay I ever fermented. It has a bit of Lemon Custard, Orange Blossom, and Honey Suckle aromas. The dusting of a light bit of unfiltered goodness gives it a slight hint of the pit of a Peach. I have always wanted to do it in this minimalistic style, so I am excited about this wine. This style of Chard I like to drink. Strong acid, nice floral notes, not too big or sweet, and a bit of salinity in the background.
