Jérôme inherited 5 acres of pinot meunier planted in the 1960s from his maternal grandmother in 1987 in the unknown village of Gueux in the Montagne de Reims. He tributes his grandmother for giving him “the taste of the beautiful and requirement for integrity” as he took great joy in farming the vines with love and care, as he still does. After much cajoling from his friend Anselme Selosse, he made his own wine for La Closerie in 1998. Anselme even offered up a corner of his cave to Jérôme, which was used to vinify and produce La Closerie’s Les Béguines cuvée until 2002. In 2003, Jérôme began producing his wines in Gueux and in 2007, Jérôme produced his second wine, a rosé he named Fac-Simile. This beautiful Jérôme Prévost La Closerie ‘&’ Extra Brut came shortly thereafter from a small amount of purchased fruit that is grown to Prévost’s very exacting standards. The name of the cuvee is Ampersand in English, or Esperluette in French, and it is 100% Pinot Meunier from the 2021 vintage.

In the cellar, Jérôme calls his winemaking style “lazy”, as fermentation occurs naturally and the wine rests for 10 months in a combination of barrels of various sizes. His emphasis is on the harvest date and harvesting at optimal maturity versus any technique in the cellar. Malolactic fermentation may occur but is never forced and only indigenous yeasts are used. Bottling occurs slowly by gravity in July without fining, filtering or cold stabilization. All bottles are disgorged extra-brut at one time in October of the following year with 2.5 grams per liter of dosage. The results are breathtaking terroir and chalk driven expressions of Champagne that wine lovers simply adore! He harvests late, something that's essential for great Pinot Meunier, and ferments his wine in barrel, like Selosse, that he doesn't top up while his vins clairs mature, so they often develop a light "voile" or veil of yeasts, that lends subtle biologically aged characteristics to his wines for extra complexity. This is a powerful but fine-boned and immensely characterful Champagne producer that make some of my favorite wines in the region.
