This Honjozo (meaning distilled alcohol is added during the brewing process) is brought to us by the Daishichi Brewing Company in the Fukushima prefecture. Made with the ancient Kimoto method (using poles to mash the rice and yeast starter), this sake gives us aromas of pine and then flavors of sweet rice, portabella mushrooms, vanilla, and chestnuts. It is a versatile sake that is enjoyed at many temperatures, and it pairs well with Fettuccini Alfredo or Paella.
Recommended Serving Temperature: 40°-50°F, 65°-75°F, or 95°-105°
