LIGHT & SUBTLE

The Higashiyama Brewing Company in Kyoto prefecture gives us two sake siblings, Konteki Pearls of Simplicity (Junmai Daiginjo) and Tears of Dawn (Daiginjo) made with the same process using the same rice (Yamadanishiki) with the exception that Tears of Dawn is made with the addition of alcohol during the brewing process. “Pearls” is subtle, with hints of white flower, Asian pear, and steamed rice. This is a great companion to Seared Scallops with Lemon Beurre Blanc or for sipping.

Recommended Serving Temperature: 40-60°F
