The Higashiyama Brewing Company in Kyoto prefecture gives us two sake siblings, Konteki Tears of Dawn (Daiginjo) and Pearls of Simplicity (Junmai Daiginjo) made with the same process using the same rice (Yamadanishiki) with the exception that Tears of Dawn is made with the addition of alcohol during the brewing process. “Tears” is luscious with notes of banana, anise, and truffle followed by a dangerously smooth finish. Pair with Braised Pork Ribs, Fresh Oysters, or Gouda cheese.

Recommended Serving Temperature: 40-60°F
