The Suwa Brewery in the lightly populated Tottori prefecture produces this umami-rich sake, Mantensei’s “Star Filled Sky”. It is named for the beautiful night sky that the isolation of Tottori provides. It is made with two rice strains, Yamada Nishiki and Tamakasae. This sake is full of baking spices, fenel, and crisp apples. It is best served at room temperature or higher and pairs great with Ginger Pork Stir Fry, Spinach Salad with Warm Bacon Dressing, or Goat Cheese with Honey Drizzle and fresh Baguette.

65°-75°F or 95°-105°F, or 120°-130°F
