Luis employs a traditional, artisanal approach to his production, adhering to time-honored methods. He begins by roasting Espadin in an underground oven, followed by milling with a tahona pulled by two bulls. The fermentation takes place in cypress tanks, utilizing spring water and ambient yeasts. Once the mash is ready, the first distillation occurs using a refrescadera still, allowing for a double distillation in a single pass. In a unique twist, Luis infuses the first distillate with blueberries, strawberries, and raspberries for a duration of one month. The infused spirit then undergoes a second distillation, with a turkey hung inside the still. The result is 5 Sentidos Pechuga de Frutos Rojos, characterized by an inviting and fresh green aroma, enhanced by fruity pastry notes. The overall experience is sweet and satisfying, showcasing the skill and creativity of Luis in the art of mezcal crafting.

140 total liters of still strength spirit were adjusted with distilled spring water by Luis Enrique and the Cinco Sentidos team to create this batch of 194 total liters in August 2023. Bottled May 2024.
