COMPLEX & DRY
Kubota Hekiju comes from the Asahi Shuzo in Niigata Prefecture. It is made with Goyhakumangoku rice that is polished down to 50% and used in the more traditional Yamahai method of brewing giving the sake a wilder complexity. The sake is produced with a focus on environmental stability and is immensely popular in Japan. You will find notes of sugarcane, nutmeg, and grapes along with a touch of honey. This is a perfect pairing for savory dishes or with sharp cheeses.
Recommended Serving Temperature: 40°-50°F or 65°-75°F
