The award-winning Nakao Sake Brewery in Hiroshima prefecture gives us the existential sake, Seikyo Omachi. Seikyo means “true-mirror” and was chosen in hopes that “the sake poured into the cup will be like a mirror that truly reflects the heart of the brewer.” It is made with Omachi rice, an un-crossed rice strain that is the oldest sake rice in use. This is a deeply rich sake with notes of yeast and grass along with soft edges and a crisp finish. Pair this sake with salads, sushi, or herb roasted chicken.
Recommended Serving Temperature: 40°-50°F or 65°-75°F
